70% Grenache, 15% Syrah, 15% Mourvedre. Vine age 30-60 years. Cropping level 30 hl/ha. From the extreme southern end of the appellation on Dentelles de Montmirail (limestone soils). This powerful and warm wine comes from a selection of exceptional terroirs. Indeed, our Gigondas vineyards are located on the arid hills of the Dentelles de Montmirail. The mistral blows regularly on the slopes, which makes it possible to limit phytosanitary treatments. In addition, the land is scarce, the soil rocky and sometimes even, our vines are on stone fields. This terroir produces a wine to keep, 10 years without problems. This cuvée represents what is traditionally done as a blend of grape varieties in Gigondas. Manual harvest. Grape varieties vinified separately to be able to harvest each at their optimal maturity. Fermentation in full harvest lasts 3 weeks. Aging for 24 months in stainless steel or concrete vats.
