They're not the prettiest grapes but they do produce something special in the glass!
Selection de Grains Nobles wines are made from dry, shrivelled berries affected by botrytis cinerea. Botrytis removes water from the grapes, leaving behind a higher percent of solids, such as sugars, fruit acids and minerals. This results in a more intense, concentrated final product.
Individual grapes are hand picked to ensure the wines are full affected by botrytis. It is a labour intensive job and comes with some risk. However, the wines produced can be aromatically rich and haunting and the high suar and acid levels make for an exceptional experience.
