This is a serious vineyard!
The Grand Crus of Gevrey-Chambertin lie on the slope between the south and middle of the commune.
But are they the most desirable sites today?
With global warming the answer is: perhaps not.
Arguably the best location in Gevrey is in the Combe de Lavaux where the slopes are steep, the soil rocky and most importantly the cool breeze flows down the valley.
This is traditionally Premier Cru territory but, boy, does it boast some great vineyards: Clos St-Jacques, Lavaux St-Jacques and Les Cazetiers all are the end of the combe.
Potentially these day the most desirable vineyards lie at the start of the valley where the forest and cooling winds have the greatest effect. 
La Romanee, Clos des Varoilles and Les Poissenots are magnificently positioned to enjoy the influence of the cooling breezes that flow through this part of Gevrey-Chambertin.
Clos des Varoilles is a monopole that is now owned by Domaine Philippe Cheron. The vineyard previously the possession of the Domaine des Varoilles but was sold a couple of years ago. Cheron has added this magnificent and quite substantial (5.97 hectare) vineyard to his portfolio.
The vine age here is significant - some of you may remember that Domaine des Varoilles used to make a super cuvee from the 100 years old vines as well as a standard Vieilles Vignes from vines around 50 years of age. Cheron has chosen just to make one cuvee (at least for the time being) so the grapes from the super old vines form part of his Les Varoilles.
Over the weekend we took the opportunity to taste the 2019 which arrived a few weeks ago. Those of you who purchased the Domaine des Varoilles bottling in the past will be delighted to know that Cheron’s bottling is basically the same. Perhaps the only change is a little less oak.

Barrel sample early 2021. Cheron’s monopole located at the high end of the Combe de Lavaux. This is a great site with a long history. The vineyard was assembled by the Chapter of Langes between 1272 and 1329 before dispossessed during the French Revolution. Cheron continues the great work done by the Domaine des Varoilles here. Deeply coloured like all the 2019’s from Cheron. It slowly reveals itself from the glass exhibiting ripe, yet cool, fruit with many layers and an elegant power. Florals abound. Balanced and captivating. A Premier Cru to add to your must buy list.

17/10/2021. 50 year old vines with a proportion over 100 years. Profound nose of dark fruits, bitter chocolate, graphite and woody spices. Cool, lifted and very floral. Attractive purity reminiscent of Vosne-Romanee rather than the more sturdy, iron-laced wines from further south in Gevrey. The wine has the depth of some of the Grand Crus with lots of layers of interest, seriously deep flavours and a refined, long finish. This is a great vineyard and Cheron has produced a superb wine in the tremendous 2019 vintage.
