Domaine Fernand and Laurent Pillot comprises just 15 hectares of vines located primarily in Chassagne-Montrachet. In addition to the vines in Chassagne the domaine has holdings in Pommard and Volnay as a result of of the marriage of Laurent to Marie-Anne. Despite the small size of the domaine their holdings include many of Chassagne-Montrachet's best Premier Cru sites.

The Domaine is included in Remington Norman's tome "The Great Domaines of Burgundy". Norman says "The cream of the cellar is undoubtedly the splendid range of Chassagnes. Lightest of the premier crus is Vergers, a crisp fresh wine for a vineyard with little soil and hard rock underneath. In such an extended, diverse vineyard as Morgeot, location has an important bearing on quality. Laurent has plots in Petit Clos and Fairendes, both with relatively fine soils, in contrast to the heavier, richer ground of low-lying sectors. The wines in Petit Clos give a wine of richness but also vivacity whereas the older plants in Fairendes contribute depth and finesse. Denser and richer is Vide-Bourse, a tiny premier cru adjoining Batard-Montrachet, which gives a fine wine, a little more backward when young but with excellent ageing potential. Noblest of all is the Grandes Ruchottes. To Laurent's surprise, every year, whatever the weather conditions, the vines give little bunches of small berries. The wine is ripe and powerful with mouth-filling substance and considerable length, yet greater finesse than the other premier crus. It essence, this is Laurent's grand cru and a worthy testament to his skill."
Laurent's whites are simply delicious and this is a great address to compare the vineyards of Chassagne. 

William Kelley of the Wine Advocate says "One of the Côte de Beaune's underrated addresses, readers looking for keenly priced white and red Burgundy of high quality would do well to acquaint themselves with Domaine Fernand & Laurent Pillot. Laurent Pillot has been working the soils since 2012 and fine-tuning élevage practices, now bottling under Diam corks to ensure the reliable evolution of his whites in bottle. What's more, with a well-appointed new winery in Chassagne-Montrachet's ZAC - opposite Pierre-Yves Colin's - and the next generation beginning to take a role in the estate, the future looks very bright. The domaine's 14.8 hectares of vines are divided into fully 63 parcels, with many prime sites in Chassagne but also enviable holdings in Pommard that formerly constituted the once-celebrated Domaine Pothier-Rieusset, to which Laurent's wife Anne-Marie is the heiress."

Pillot Grandes Ruchottes Label Wine Advocate - William Kelley:
The 2017 Chassagne-Montrachet 1er Cru Grandes Ruchottes is excellent, unfurling in the glass with notes of pear, green apple, iodine, white flowers and pastry cream. On the palate, the wine is medium to full-bodied, satiny and layered, its texture balanced by good energy and cut, displaying impressive concentration and length. As usual, it's one of the range's high points. Pillot's parcel is planted with old vines on SO4 rootstocks, which today produce lots of small shot berries. 92-94 Points

The interest in Champagne Salon outstrips their small production. With the news that it is unlikely there will be any 2009, 2010, 2011 and 2012 and that 2008 will only be available in Magnum there has been something of a rush to secure what is still available.
Wine Enthusiast: This legendary Champagne, only produced in exceptional years, comes from the village of Le Mesnil in the Côte des Blancs. It is made from 100% Chardonnay and aged for many years before release. Its minerality, concentration and beautiful fruit are still astonishingly young and deserve further aging. Drink from 2020. *Cellar Selection*. 99 Points

James Suckling MW: Such an impressive wine for the detail in every respect. The nose delivers fresh lemon and grapefruit peel, together with white, stony minerals and very, very fresh and light pastry notes. Some grilled hazelnuts, too. The palate is super fine, supple and crisp with attractive, dry, salty minerals on the finish that holds super long, fine and focused. Elegant citrus and light brioche to close. Drink or hold. 97 Points

Wine and Spirits: This latest release of Salon announces itself with energy and leaves with freshness. It comes from a vintage marked by a cool, cloudy August that delayed ripening; after the vines recovered in September, they yielded this delicate chardonnay, completely saturated with flavor. It comes from 20 parcels in Le Mesnil-sur-Oger, a selection established by the founder, Aimé Salon, in the early 1900s, including one estate parcel of 2.5 acres. Other than exclaiming on the wine's delicious flavors, our panel was seduced by its texture, describing it in variations of silk, satin or chalk and velvet whiteness. It has a presence-a remarkable infusion of chalk soil-that sets it apart.

Antonio Galloni Vinous: 
The 2007 Salon is gorgeous. Weightless, delicate and understated, the 2007 is all class. Today, the 2007 reminds me of the 2004 in its bright, citrus and floral-infused profile, but with a bit more creaminess, mid-palate depth and softer contours, all of which will make the 2007 easy to drink with minimal cellaring. Next to the 2006, the 2007 is quite a bit fresher and more delineated, with none of exuberance, power of tropically-leaning overtones found in its younger sibling. At this stage, the 2007 is a bit inward and closed in on itself. Then again, it is Salon. This is another terrific showing from Salon and the team headed by President Didier Depond. Dosage is 5 grams per liter. 96 Points

Always a very popular wine.

John Gilman "View from the Cellar": The 2017 Murgers des Dents de Chien from Domaine Chartron is outstanding and was really singing at the time of my November visit. The bouquet delivers lovely purity and complexity in its blend of pear, white peach, crème patissière, a complex base of chalky soil tones, bee pollen, almond and vanillin oak. On the palate the wine is deep, full-bodied and a touch more reserved in personality than the Perrières, with a superb core of fruit, fine soil inflection and a long, zesty and very promising finish. Excellent juice. 2021-2045+. 92 Points

Darren Harris: A classy bouquet offers up a complex mélange of pear, peach, citrus and chalky soil tones. On the palate the wine is deep and full bodied with more weight than the St-Aubin 1er Cru Perrieres from the same stable. Saline and mineral it finishes with a lashing of acidity and serious length. Another great example from this super vineyard.
