We are down to our last few cases of all of the Domaine des Varoilles 2016 Burgundies. These are tremendous examples of Gevrey-Chambertin from some rarely seen vineyards (no less than 4 Monopoles). Don't delay or you will miss out. The wines are just about to leave France.

Named after a 12th century Premier Cru vineyard, the Domaine des Varoillles has expanded over the years to cover 10 hectares in 8 special appellations.

The meticulous Gilbert Hammel is in charge of the vineyards which include 4 Monoples in Gevrey-Chambertin! The Premier Cru Monopoles Clos des Varoilles and La Romanee lie high in the cool combe near Lavaux St-Jacques and Clos St-Jacques and express a beauty and elegance seldom seen in Gevrey-Chambertin.

A half hectare Monopole.
Graceful, with noble tannins, tender and refined, the Clos du Couvent expresses fidelity to its terroir in fruity touches, dominated by cassis and blackberry.

Darren Harris: The domaine's "home block" Monopole located within the domaine's walls alongside the old convent on the property.

Varoilles Clos du Meix
A 1 hectare Monopole. Beautifully located this wine combines liveliness and tannins with fine aromas of fresh wild berries and red fruits. With five years age becomes velvety smooth. 

Jancis Robinson: 
Monopole. Mid purplish crimson. Dark fruits and some oak sweetness are the first impression. Quite oaky but not excessive at this stage. Same oak sweetness on the palate and plenty of dark fruit, the tannins smooth and deep. Velvety and sweet-fruited to a long finish. Generous and rounded. 16.5/20

Darren Harris: 
Just bottled. Red-garnet colour. Plenty of aromatics - red-black fruits, a little liquorice, a touch of minerally earth. Fresh and bright with a fullness in the mouth. The tannins are fine and well coated leaving a lovely sense of roundness and balance.

Varoilles Romanee Label
A 1.06 hectare Monopole. With a great finesse, generous and opulent in mellow tannins, this premier cru cleverly mixes black fruits with the scent of humus and smoke to compose a voluptuous bouquet. Four to five years in the cellar to blossom.

Jancis Robsinson: Monopole. Mid cherry red. Again that attractive dusty/mineral nose, maybe whole-bunch influence, more noticeable than on the above. Super-moreish and extremely fine tannin texture. Finesse and harmony with a mouth-watering finish17/20

Darren Harris: 
A super monopole from high in the combe that influences the best 1er Crus of Gevrey-Chambertin. La Romanee is stony and south facing but the forest provides some shade and ensures a cool wine with great finesse.
 
60 year old vines. 100% destemmed. Very different to Champonnet served before it. A gorgeously restrained nose of cherry, earth and iron. The palate has crunchy red-black fruits and fine mineral notes that fan out in in the mouth. The tannins start late and provides a long and elegant finish. This is a wine of considerable finesse and style.

Darren Harris: 
Immediately south of La Romanee, high in the combe. Clos des Varoilles in a significant monopole of almost 6 hectares that was planted in the second half of the 13th century by the Chapter of Langres before it was dispossessed during the French Revolution. 
 
45-65 year old vines, 40% new oak. Deeper and richer than La Romanee with more breadth and complexity. Darker fruits with some liquorice-scented floral notes and a hint of wildness. There is a fine spine of acidity running through the wine which ensures, despite some weight, it remains balanced and captivating.  A Premier Cru to add to your must buy list.
Charmes-Chambertin Grand Cru 2016

Varoilles Charmes label
A 3/4 hectare holding. Charmes-Chambertin combines the proverbial vigor and robustness of Chambertin with elegance and finesse. Intensity of aromas, with animal scents, well-established tannic structure and power are the hallmarks of this grand-cru.

Jancis Robinson: Deep cherry red. Deep in sweet fruit and oak sweetness. Smooth, velvet tannins and has plenty of freshness under the (currently) very obvious oak. Needs time for the oak to recede but it has plenty of stuffing to do that.

Darren Harris: 
Charmes-Chambertin remains a bit of an enigma. It is by no means the most popular Grand Cru of Gevrey but when it is good, it can be very, very good. Domaine des Varoilles Charmes-Chambertin is a supremely impressive wine. It is bigger and much deeper than all of the Premier Crus. The nose displays dark fruits, smoke and minerals. On the palate there is more with dark chocolate and a rich, creamy texture. There is new oak (60% used here) and some powerful but not coarse tannins. Needs some time in the cellar. Great Charmes!

Albert Bichot Gevrey-Chambertin 1er Cru Lavaux-St-Jacques 2012

One of the great appellations of the Côte de Nuits both in terms of size and of reputation, Gevrey Chambertin is characterised by a wide variety of different terroirs. No white wines are found here, only pinot noir is cultivated. These vines are situated along the slopes lining the exit of the Lavaux combe and are orientated southeast to east-southeast. The soil is shallow and light with brown limestone on the upper section and brown calcite towards the lower portion. The presence of clay is abundant on thick limestone beds dating to mid- to late-Paleozoic.
Tim Atkin MW: Made with purchased grapes, this is still among the top wines at Bichot in 2012. It's a single parcel red that is very true to its cool, even chilly terroir. Fresh and silky with classic red cherry, raspberry and pomegranate notes, it's gently rather than aggressively oaked and very minerally to boot. 2017-25.

A mix of macerated cherry, currant, spice and mineral are the hallmarks of this harmonious, beautifully integrated red. Sleek and vibrant, with a long, mouthwatering finish. Best from 2019 through 2032. 200 cases made. 93 Points

Burghound: 
An exceptionally fresh, cool, pure and restrained nose is classic Gevrey with its intensely earthy and sauvage character that adds breadth to the ripe wild red currant aromas. There is a lovely sense of underlying tension and energy to the mineral-inflected, firm and beautifully well-detailed medium weight flavors that culminate in a tautly muscular and moderately austere finish. This will require at least a decade of cellar time to unwind and realize its full potential. 2024+. 90-92 Points
