There is no better white wine in the world than Chevalier-Montrachet. Most white Burgundy aficionados prefer it to the more highly priced Montrachet as Chevalier has more minerality and line. 
Chevalier-Montrachet lies up-slope from Montrachet where it is slightly cooler. Here the topsoil is thinner and stonier due to the steeper slope. The bedrock is also different as there is a geological fault line between the two vineyards. The bedrock in Chevalier contains more limestone and is similar to the Cote de Nuits. These features combine to create the much-loved minerality of Chevalier-Montrachet.
In 1913 Louis Latour purchased a 0.51 hectare parcel at the northern end of the appellation. This parcel has the sobriquet Les Demoiselles in honour of the 19th century owners Mademoiselles Adeles and Julie Voillot, the daughters of a Beaune General who died without marrying.

This 0.51-hectare parcel has been part of the Louis Latour portfolio since 1913, and has never tasted better as a young wine in my experience. Fermented in new oak, as all the top whites are, this has appealing vanilla spice and toast aromas, sappy, mouth-watering acidity and considerable weight. Delicious. 2021-30. 96 Points

Au Pied du Mont Chauve Puligny-Montrachet 1er Cru Les Demoiselles 2015
Located immediately below Chevalier-Montrachet Les Demoiselles is Puligny-Montrachet 1er Cru Les Demoiselles. 
It too is a very special vineyard. Jasper Morris MW says "The tiny Puligny-Montrachet Les Demoiselles is both very rare and potentially of exceptional quality, so highly sought-after."
There are just three owners of this 0.6 hectare vineyard. One of those in Au Pied du Mont Chauve. The domaine has one custom made 350 litre barrel to hold their entire production. That's 466 bottles for the world! 
We have just over a case of the 2015 in stock. It would make an exceptional pair with the Chevalier-Montrachet Les Demoiselles.
Darren Harris: Harvested early - 5 September. The 2015 is richer and more powerful on the nose than the 2014. The mid palate has higher glycerol and more texture. There is heaps of extract - Grand Cru weight. To be honest it doesn't remind me of any other Premier Cru - it has that pineapple character, which combined with multi layered complexity, immediately sends me 10 metres south to Montrachet. And more so than the higher acid 2014. The wine finishes long and fresh, surprisingly without oak influence (the domaine uses a specially made barrel for the vinification as the quantity produced is so small. It was not new in 2015). I was very impressed with all of the 2015 whites at this domaine but the wine that stands out, and even benefits from the character of the vintage, is Les Demoiselles.
