Domaine Ampeau marches to the beat of a different drum, with Michael Ampeau continuing the work of his late father Robert. The wines are released when Michael considers them ready to drink. And that is always with some serious age. Long ago this was more common in Burgundy but the pressure of modern business and the desire of most consumers to drink wine when very young, has rendered Domaine Ampeau a rare (and loveable) dinosaur.

One would normally have to scratch their head and wonder when presented wines to taste at this domaine. The choices are Robert's and it is a bit of a take it or leave it situation. However, I have never tasted anywhere where the vintage on the label seems less important. You simply taste what is in the glass. Difficult years, with 20 years under their belt, have morphed into magnificent wines. The low-intervention, old-fashioned winemaking regime, combined with long cold cellaring, has produced wines that are incredibly fresh. And premox - it's unheard of.

If you open a 1993 Meursault it will taste like a 24 year old wine that has been perfectly cellared. It will have some development but still be fresh with great typicity. I suspect many of us forgotten what this is like. No doubt younger drinkers have never experienced the glories of seriously old white Burgundy.

 Not quite as complex as the 1994 Piece Sous le Bois served before it but perhaps even fresher. Butter, grapefruit, green apple, smoke. Fresh acid on the palate with a lively tang on the long finish. Excellent concentration with some bottle development make this a great wine to enjoy now but it is caught in a time warp and will no doubt live another decade without much change.

Darren Harris: Fresh toasty nose, so typical of aged Meursault of yesteryear. Hazelnuts, buttered toast, candied citron - the palate is full of wonderful flavours. There's a note of vanilla and a little spice. The finish is acid and long. A complete wine drinking suberbly at 23 years of age! 1994 pre-dates the premox problems in Burgundy but from this bottle it is hard to envisage this wine ever being afflicted.

Darren Harris: Beautiful pale color. A whisp of sulphide on the nose! Nuts, brown butter, minerals galore: elegant and fresh, in fact tightly wound, with a real sense of underlying power. Long and very persistent on the finish. Very stony. 1996 was considered an outstanding vintage with wonderful acidity and this wine proves the point. Perrieres is a great vineyard and at 21 years of age this wine is not yet ready. Treat yourself!

And what to drink with such robust food? A bottle of the 1976 Robert Ampeau Volnay Santenots turned out to be just what the doctor ordered. Ampeau's wines develop at a glacial pace, and this beauty was no exception. Youthful red in color, it offered bright red cherry and floral aromas with more spicy (however closed), brooding flavors on the palate. The red cherry and dark berry fruit were shrouded beneath a very firm but polished cloak of tannins. As the wine was still closed and unyielding, with noteworthy but balanced acidity providing freshness and lift, it seems to be frozen in time, floating in some sort of vinous (no pun intended) suspended animation. The terroir of Santenots (characterized by a thin, red, iron-rich, heavy clay soil lying just above subsoil of hard limestone) tends to result in bigger wines than is typical for Volnay, so it's more than likely Ampeau's winemaking style and the nature of the 1976 vintage (a hot, dry summer led to powerful, tannic wines) that account for this wine's personality. Impressively, this remarkably youthful wine exhibited no roasted or cooked aromas and flavors, and matched extremely well with the lamb broth, the stew and the heart preparations. - May 2015.
