As far back as the 16th century the monks of Saint Martin cited the Servin family as vineyard owners in Chablis. Since then, successive generations have perpetuated the family's tradition and ever-evolving expertise as vineyard workers, coopers and winemakers. Today the domaine is run by Francois Servin with the assistance of his Australian brother-in-law, Mark Cameron. I often run into Mark when overseas. He is always good for a chat about most anything.

Domaine Servin's 35 hectares of vineyards are situated within the boundaries of the village of Chablis, lying solely on Kimmeridgian limestone soils, which gives the wines their incomparable minerality. The majority of the vineyards are over 40 years old. The different rootstocks of these non-cloned Chardonnay plants produce a unique style of Chablis, combining concentrated flavours and intense aromas.

With all the fuss over the 2014 Chablis we have neglected some other great wines in the marketplace. Today I offer a small parcel of 2012 Grand Cru Bougros and Les Clos from Domaine Servin. They are both exceptional wines and at less than $100 a bottle are serious value for Grand Cru Chablis.

Servin's 2012 Chablis Bougros is built on a serious core of linearity, tension and energy. Beams of acidity and minerality lends support to bright lemon peel, grapefruit, mint and crushed rocks. The vibrant, razor-sharp finish is hugely attractive, but readers will have to be patient. The best is yet to come. 2016+.

The 2012 Chablis Les Clos has come together very nicely over the last year. Vinification and aging in oak gives the Clos much of its signature texture, but the oak is also impeccably balanced. Dried pear, spice, licorice and mint are woven into a hugely appealing finish that is all about texture. 2016+.

We have a little of four popular Premier Crus from 2014 available: Butteaux, Mont de Milieu, Vaillons and Vaucopins.

The Mont de Milieu and Vaucopins were new to the domaine in 2012 and only around 2000 bottles are produced annually from 40+ year old vines.
