Just one parcel, 0.32 hectares with a manual harvest as there’s a lot of millerandes here. 100% demi-muids (600 litres) for 8-9 months then in tank to finish – one was newer, hence, this shown after the Tonnerre as the oak is showing a little.
Green-fruit, a little oak-induced aromatic softness but no overt oak notes – only slowly do they start to appear in the glass. Round, complex, fine, certainly with an extra kick of oak. But a fine and tasty finish – beautifully mouth-watering.

Assembled yesterday having been in barrel and demi-muid. Light primrose colour. The nose shows more class than Montée de Tonnerre, with weight from both the site and the wood. Very mouthfilling yet balanced by good acidity behind, a little touch of toast, some white peaches but not undue heat.

The 2018 Chablis Mont de Milieu 1er Cru was fermented in 600-liter demi-muids. It has a well-defined bouquet of yellow flowers mixed with green apple and crushed flint, the classiest nose of the four 2018s that I tasted from Collet. The palate is well balanced with a tangy, orange peel opening. Harmonious, with just a very slight honeyed texture betraying that year’s summer, it has commendable depth on the finish and impressive persistence. Excellent. (Drink between 2022-2035)
