There is no better white wine in the world than Chevalier-Montrachet. Most white Burgundy aficionados prefer it to the more highly priced Montrachet as Chevalier has more minerality and line. 

Chevalier-Montrachet lies up-slope from Montrachet where it is slightly cooler. Here the topsoil is thinner and stonier due to the steeper slope. The bedrock is also different as there is a geological fault line between the two vineyards. The bedrock in Chevalier contains more limestone and is similar to the Cote de Nuits. These features combine to create the much-loved minerality of Chevalier-Montrachet.

In 1913 Louis Latour purchased a 0.51 hectare parcel at the northern end of the appellation. This parcel has the sobriquet Les Demoiselles in honour of the 19th century owners Mademoiselles Adeles and Julie Voillot, the daughters of a Beaune General who died without marrying.

Compacted and powerful yet always in finesse and beauty. Great transparency. Full-bodied, tight and focused with lemongrass, stone, dried lemons and green apples. Excellent length. Drink a couple of years after release and beyond.
