Such a great thing to drink, good Chablis: my favourite. This is cool and scented with mint and fennel, stony with dilute citrus and green apple flavours, crunch and freshness on a crunchy cucumber finish of fine length. Delicious. Suspect I’ll be buying a bit of this.

The 2014 Chablis 1Er Cru Vaillons, which is matured exactly the same way as the Fourneaux, has a crisp chalk dust and brioche scented bouquet that is well defined and conveys admirable mineralité. The palate is fresh and crisp with cooking apple, fresh pear and saline notes, respectable weight in the mouth with a brisk, granitic finish. (NM)

On the south side of the village of Chablis, the Vaillons vineyard is on the cool, left bank of the river Serein. It is fruity with a creamy texture and a line of steely acidity that often marks out the premier crus, giving this wine the chance to age. Drink from 2017.
